Christmas goodies – The cola ham

This year we suggested doing something different instead of the cola ham.  It almost caused a riot.

Sweet, sticky, savoury flavours that fill the house with a delicious Christmas smell.  Boxing Day ham and eggs with a bit of HP sauce is next level too.

RECIPE

1 leg or shoulder of ham (around 5kg) – skin removed, fat scored
1 litre of cola
2 cinnamon quills
1 tsp each of whole cloves and fennel seeds
3 cardamom pods

Pre-heat the oven to 160 (fan forced) or 180 (standard bake).

Place ham in a large roasting pan with the cola and spices.

Roast for 2 hours, basting with the cola every 20 minutes.  Set your timer, this is critical.

Remove ham from the pan and cover with foil.

Transfer pan to the stovetop, bring the liquid to the boil and reduce to the consistency of maple syrup.

Brush thickly over the ham.

Serve at room temperature with other goodies like creamy potato and egg salad and pickles/pickled onions.
