Kitchen witchcraft – fantastic Mr fudge

Another one bowl super-easy microwaved treat!

I remember trying to make fudge as a kid.  The vigorous bubbling on the stove was scary business.  I always took it off too soon.  I always made sticky goo instead of crumbly melt-in-your mouth decadence.

This recipe however, is a winner.

1 395g can of sweetened condensed milk
100g butter, cubed
1 1/4 cups firmly packed brown sugar
1 Tbs golden syrup
100g good quality chocolate – dark or milk.  I use chocolate buttons/chips or whatever’s lurking in the fridge
butter to grease the pan

Put the condensed milk, butter, brown sugar and golden syrup in a 3 litre heat-resistant glass bowl.

Cook uncovered for 10-12 minutes on medium (750watts) stirring every 2 minutes.

When the entire surface looks bubbly and a bit “separated” it’s done.

Add the chocolate and stir until smooth and combined.  This takes all of 10 seconds.  Pour immediately into a greased 20cm pan.  I use the same pyrex dish as the brownies.

Put it in the fridge until firm – usually about 1 hour.

Cut it carefully with a very sharp knife if you are giving it away.  Otherwise, cut rubble looking chunks and enjoy.  Try to stop at one piece.
