I don’t make waffles, Nathan does. His are always light, fluffy, crunchy on the outside and they don’t stick to the waffle iron. Perfection.
RECIPE (makes about 10 waffles)
2 cups plain flour
1+ 1/3 cups milk
1/2 cup vegetable oil
1 Tbs white sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
Preheat your waffle iron.
Beat the eggs until fluffy. Add everything else and beat until smooth.
Slowly pour the waffle mix in the middle of the iron and let it do it’s lava flow thing until halfway to the edges. Close the iron and cook at med-high temp for 2-3 minutes (depends on your waffle iron).
Put your cooked waffles on a wire rack or the steam will make them go wet and soggy on the plate.
