Paleo egg cups

Paleo. Did our cave ancestors really eat bacon? Doubtful, but every so often my body needs a rest from carbs and these are delicious hot or cold.


(makes 6)
6 pieces of bacon
6 small eggs
rosemary sprig
a tiny bit of oil

Very lightly grease 6 muffin tray cups. Pre-heat oven to 200C fan forced.

Cut bacon in the middle halfway and curl into a cup shape. Press each piece of bacon into a greased muffin tray cup. Bake for five minutes.

Break an egg into each bacon cup and sprinkle with rosemary and pepper. Bake for another 10 mins for a firm egg with a soft yoke.
