The wine guy occasionally makes me this amazing fresh-tasting and healthy dish, simply called “Summer”.  It contains an abundance of one of my greatest joys, the tomato.

My obsession with tomatoes is thanks to Anita Roddick, owner of the Body Shop.  She claimed that anti-aging creams are a “complete pap” and a “scandalous lie”.  Her recommendations include “you’d be better off spending the money on a good bottle of Pinot Noir” and … “eat tomatoes.”

“Tomatoes make you happy,” says Italian-born Miss Roddick. “Have you ever met a miserable Italian? They are irritating but never miserable.”



500g ripe tomatoes (the coloured ones look so pretty)
1 small onion or half a red onion
pitted or pimento green olives – as many as you want
1 Tbs capers
1/3 cup chopped parsley
1/3 cup chopped oregano
2 cloves of garlic (or less if this is a date dinner)
1/2 cup olive oil – light or 1/2 evoo + light

Chop it all up and mix with the oil.  Cover and stand in the fridge all day.

Cook the pasta of your choice and toss Summer through.
