Sunshine bliss balls

I don’t like dates.  They remind me of cockroaches.  Not the small kiwi ones, the huge Aussie cockies that appear as soon as Spring arrives.  However, after attempting to make bliss balls without them I’ll conceed that they are a necessary ingredient.  Blasted into sticky smithereens, they are rather palatable after all!

Note: Go organic with the below ingredients if you can afford it.  LSA can be found at Woolies in the health food section near the cereals and gluten free biz.  We add it to bread loaves and rolls as well for an extra bit of goodness.

1 cup LSA (ground linseed, sunflower and almond meal) or any ground nuts/seeds meal
2 heaped Tbs raw cacao
3/4 cup pitted dates
3/4 cup desiccated coconut
1 tsp vanilla essence
1 Tbs coconut oil

Put all the ingredients into the food processor (except 1/4 cup of the desiccated coconut) and whizz until a sticky brown mess with no obvious bits of date.

Wet your hands and shape spoonfuls into balls and roll in the remaining desiccated coconut.

Pop them in the fridge to set firmly.

Eat as a healthy treat but don’t exceed 3 per day if your body isn’t used to a high fibre diet.
