When I consider a new recipe, the majority of the ingredients have to be either in my cupboards or in the garden. This is a perfect mix of both.
Prawns. Lots. Peeled and de-poopered
1 tsp cumin seeds, crushed
2 Tbs sesame seeds
2 Tbs sesame oil
1 bunch of brocollini, chopped into bite size pieces
1 large red onion cut into wedges
1 cup of mint leaves
1 cup of basil leaves
2 Tbs maple syrup
2 Tbs fish sauce
2 Tbs lime juice
1 red chilli, chopped
1 small clove of garlic, crushed
1 lemongrass stalk, inner bit only, chopped
In a small saucepan, combine the maple syrup with 1/3 cup of water. Boil until half reduced. Set aside to cool. Stir through the rest of the dressing ingredients.
Combine prawns, sesame oil, cumin seeds and half the sesame seeds in a bowl. Toss then cover and chill for 1 hour.
In a wok or large pan, sear the onion on a very high heat until coloured. Remove. Stir fry brocollini until tender. Toss through remaining sesame seeds.
Thread prawns onto skewers and barbeque on the grill side until cooked with a bit of char colour.
Remove prawns from skewers and combine everything in a bowl Dress and toss.
